Green Pesto Bows with Magic Avocado Powder
INGREDIENTS SERVES 4
● 200g dried farfalle pasta
● 1 avocado
● 50g fresh green pesto
● 1tablespoon lemon juice
● 30g mature Cheddar
Stone and roughly chop the avocados. Finely grate the mature Cheddar.

1 Cook the pasta in plenty of boiling water, according to the pack instructions.
2 Meanwhile, put the avocado in a mini food processor – or use a handheld
blender – with the pesto and lemon juice and blitz until completely smooth. If you
do not have a food processor, mash the avocado with the pesto and lemon juice.
3 Drain the pasta in a colander, but save 3 tablespoons of the cooking water. Tip
the drained pasta back into the bowl with the reserved cooking water and
