French Style Cornish New Potato Salad

INGREDIENTS SERVES 4

  • 500g Cornish new potatoes
  • 3 tbsp extra virgin olive oil
  • 0.5 Grated zest and juice of a lemon
  • 1 tbsp Dijon mustard
  • 4 spring onions
  • 2 tbsp fresh chive

PREPARATION

Halve the Cornish new potatoes. Slice the spring onions. Chop the fresh chive.

METHOD

1 Cook the potatoes in boiling salted water for 10-15 minutes, until tender.
2 Meanwhile, in a large bowl, whisk together the oil, lemon zest and juice, mustard, salt and pepper.
3 Drain the potatoes and tip them into the bowl. Mix well and leave until just warm.
4 Stir in the spring onions and chives, and serve.
